  • Rice (long or short-grain)
  • Ripe fresh tomatoes
  • Red bell peppers

  2. Fry your tomato paste in hot oil
  3. Add the pepper mixture in the oil for 15–20 minutes until it deepens in color.
  4. Add curry, thyme, and bay leaves—cook until aromatic.
  5. Pour in your chicken/turkey stock, season well, and bring to a boil.
  6. Wash rice, add it to the pot, stir, then cover tightly.
  7. Cook on low heat so the rice absorbs all that goodness.
  8. Once done, turn off the heat and let it steam for 5 minutes before serving.

  • Cook in a heavy-bottomed pot to avoid burning too quickly but allow gentle charring at the bottom.
  • Use foil to trap in the aroma.
